Description

Designation: Gaillac AOP

Grape variety: 100% Duras

Soil: Slopes and clay-limestone plateau

Grape Harvest:

Yield: 40 hl/ha

Wine-making:

Our Gaillac rosé is usually a blend of local grape varieties, but this year, the Duras component alone provided the balance we were looking for!

We perform direct pressing of the grapes, which are harvested fresh early in the morning. This is followed by cold static settling to remove coarse particles from the must; after racking off the clear portion, we allow the temperature to rise to encourage the onset of alcoholic fermentation, carefully monitoring the temperature to keep it below 18–19°C; after a few weeks, malolactic fermentation begins. In the months that follow, the wine is exposed to cold temperatures to achieve the stability required for bottling.
