Tasting:

Color: deep red with violet highlights.

Nose: The initial aroma offers delicate notes of flowering fruit trees and a softer hint of stone fruits; it then reveals its spicy side—white pepper, licorice—and finally, a few notes of violet also emerge.

Palate: It is smooth and silky, balanced from start to finish; it has a lovely acidity characteristic of the vintage and the cool temperatures of the second half of September. All the flavors unfold with each sip, culminating in a cherry finish.

Food and Wine Pairings:

The freshness, silky texture, and floral and spicy notes of this 100% Duras wine pair perfectly with herb-roasted poultry, duck breast with cherries, grilled mushrooms, or a porcini mushroom risotto, as well as a sheep’s milk tomme.

To preserve its full finesse, avoid pairing it with very spicy or hot dishes, strong sauces, heavily grilled red meats, and blue cheeses, which would overpower its delicate balance and freshness.

Recommended serving temperature: between 14 and 16 °C.

Grape Varieties: 100% Duras, hand-harvested

 Winemaking:The winemaking process is as simple as the ingredients in this wine: nothing more than the grapes, gently destemmed and placed in stainless steel tanks. On September 15, the day of the harvest, the temperature was cool, so we took the opportunity to perform a cold maceration for a few days and then allowed the temperature to rise slowly so that the native yeasts could begin fermentation. We determined that after about two weeks of contact with the berries, the extraction would be perfect. Once fermentation was complete, we racked the wine only twice to achieve a naturally clear wine with minimal oxygen exposure. It was then bottled unfiltered toward the end of May.
