Winemaking:The winemaking process is as simple as the ingredients in this wine: nothing more than the grapes, gently destemmed and placed in stainless steel tanks. On September 15, the day of the harvest, the temperature was cool, so we took the opportunity to perform a cold maceration for a few days and then allowed the temperature to rise slowly so that the native yeasts could begin fermentation. We determined that after about two weeks of contact with the berries, the extraction would be perfect. Once fermentation was complete, we racked the wine only twice to achieve a naturally clear wine with minimal oxygen exposure. It was then bottled unfiltered toward the end of May.
