Wine Production :
The winemaking process is similar to steeping: first, the Duras grapes are destemmed, and about five days later, the Braucol grapes are destemmed and transferred to the fermentation tanks by gravity. Skin contact is brief—about a week—with very little pumping over.
During devatting, the skins are gently pressed, and the extracted juice is returned to the wine to add body. It will settle throughout the winter, exposed to cool temperatures, before being bottled in April without filtration.
