Tasting notes: Both on the nose and on the palate, the fruit is intense and dark, with hints of cranberry and blueberry jam, all balanced by slightly smoky, minty notes.

Food and wine pairing: In the summer, it’s perfect with a barbecue and should be served slightly chilled. It pairs perfectly with stuffed and au gratin seasonal vegetables, or a delicious risotto with green asparagus.

Description

Designation: Gaillac AOP

Grape varieties: 50% Braucol / 50% Duras, hand-harvested

Soil: clay-limestone

Wine certified as“Méthode Nature,” with no added sulfur.

 

Wine Production :

The winemaking process is similar to steeping: first, the Duras grapes are destemmed, and about five days later, the Braucol grapes are destemmed and transferred to the fermentation tanks by gravity. Skin contact is brief—about a week—with very little pumping over.

During devatting, the skins are gently pressed, and the extracted juice is returned to the wine to add body. It will settle throughout the winter, exposed to cool temperatures, before being bottled in April without filtration.
