Notre Gaillac rosé est normalement un assemblage de variétés locale, mais cette année la composantes Duras avait tout simplement en elle, l’équilibre souhaité !
We perform direct pressing of the grapes, which are harvested fresh early in the morning. This is followed by cold static settling to remove coarse particles from the must; after racking off the clear portion, we allow the temperature to rise to encourage the onset of alcoholic fermentation, carefully monitoring the temperature to keep it below 18–19°C; after a few weeks, malolactic fermentation begins. In the months that follow, the wine is exposed to cold temperatures to achieve the stability required for bottling.
