Gaillac Red 2012

Our top of the range wine, made primarily from the Braucol grape. It owes its discreet woody flavour to its storage in oak barrels. A much sought after choice.

Merlot 30%
Cabernet-Sauvignon 20%

Harvest : Traditional

Winemaking :
Maceration in temperature-controlled stainless steel vats. At the beginning of the fermentation, we do pumping over the cap in order to keep all the tannins and colours that will structure the wine. Followed by two rack & return. Controlling temperature at this stage is very important. Around 25°C, the wine is going to develop all its primary aromas and showing its potential. We apply horizontal pneumatic pressing with slow rising pressure to avoid the extraction of “green” tannins. Then the wine undergoes to malolactic fermentation followed by clarification & filtration.
Ageing : A year in French Oak Barrel of 225 L & 2 500 L.
Bottling : At the estate in 750 ML.

Characteristics :
Appearance: deep intense purple with glints of rubis.
Aroma: nose full of black cherry with a finish note of coffee-roasting from the oak barrel aging.
Taste: a firm palate, medium bodied and rounded wine well balanced. The aromas hold the fruit. Smooth finish with spices and coffee-roasted flavours.

Serve with : With Southern West cuisine. Wonderful with Magret of Duck deglazed with Balsamic Vinegar.

Serve at : 18°C
Consume within : Dry Red Wine that can be kept up to 10 years.
